Harvest: last ten days of September; hand harvest in 8 kg crates with selection of the bunch in the vineyard and off-vine drying process on bamboo racks in climate controlled rooms
Vinification: after two months of drying process, selection of the berries in the winery and vinification in steel tanks with temperature control, 12 to 18 days of maceration
Aging: in steel tanks with fine lees subject to bâtonnage, then in 225 liters oak barrels for a total of thirty-three months
Refinement: in the bottle for four months
